To prepare the filling we choose only the noble parts of the best Italian meats, so that the lean component is never less than 85%. It is healthier as well as tastier. The meat is browned using only fresh vegetables. So fresh that we buy them again three times a week. We then add Grana Padano DOP 18 months, sage and fresh rosemary.
